First Cakes with New Mixer

My first cupcakes with my new mixer.

The product of any experiment is partly dependent on the availability of the necessary equipment for its undertaking. In science, high performance analytical equipment is muy muy expensive but gets the job done extremely well; this holds true with baking.

You can make a cake with a bowl and wooden spoon (which I have done many times in the past) and it comes out perfect; though you can expect to be exhausted afterward (especially if you're beating butter and sugar). However, throw a regular hand or standing mixer into the equation and save time and energy (though there may be worry of over beating). But! Substitute your regular mixer with one that has a "Folding Function" and save time, energy and never worry about over beating!

The cupcakes above are probably not my best work where decorating is concerned, but they are the first with my new mixer and they received great reviews at the Potluck and from other people I shared extras with. The cupcakes were Red Velvet with Cream Cheese Icing, Yellow Cake with Strawberry Buttercream and Double Chocolate Cake with Chocolate Icing on a custom made disposable cake stand.
