Quick Concoction: Complete Breakfast Cupcakes!



I decided to "jazz up" breakfast this morning with a cupcake twist. Here's what I came up with... 

And it only took about 30mins! Continue reading to see how it was made.

Materials:
2 slices of bacon (I used thick cut pork bacon)
3 eggs
1 small tomato
2 leaves of cilantro
0. 25 onion
1 unpeeled potato, sliced and fried

Method:
Step 1: Preheat oven at 350 degrees. Line a silicone baking cup with bacon. (Regular cupcake pans will work  also) Bake at 350 degrees until half cooked about 10 mins.

Step 2: Prepare some scrambled eggs. I added tomatoes, onions and cilantro.

Step 3: Remove half cooked bacon shells from oven and fill with scrambled eggs. Top with extra sharp cheddar cheese. Bake for 20 mins.

Step 4: Remove from baking pan and serve! With hash browns, fried potato slices or even bread! (Serves 2)
