The things we take for granted...

I decided to whip up a batch of red velvet beauties for dessert today and everything was going smooth till I realized they had been in the over for about 1 hour and still weren't done yet.
Now anyone who has baked a cupcake knows that the regular sized ones take about 25 to 30 mins. So I quickly went over my recipe to ensure I didn't leave anything out and I didnt.... I was peering at the delicious batter in the over and was trying to figure out what went wrong. And then it hit me...
How was it that my face was infront of the oven and I was comfortable? Because the oven wasn't hot enough!
Now the knob said 350 degrees, but the flames didn't get the memo. So now I realize that my oven requires special treatment: I must turn the knob all the way up and then down to my desired temperature...
The cake just came out and though they sunk (as could be expected) they are so yummy... Definitely worth the wait!
